Pitfalls of buying Cat C ?

Hi all,
Frequently whilst doing my research i often come across bikes for sale that are registered as "category C"
They are considerably cheaper and some only have slight cosmetic damage, some with or without documents.

What are the pitfalls of buying such a bike ? is it difficult to get new documents and more importantly insurance ?

Category C: Vehicle extensively damaged and insurer has decided not to repair. The vehicle should have an independent inspection before being allowed back onto the road.

Needs an MOT once repair has been completed, Sometimes can be a gold mine sometimes a money pit but tread carefully though.
